Hi, my question is, can I play games like gta V or bf1 on a GTX 1060 3GB on a 29 inch LG Ultrawide 2560x1080 monitor? is it enough? will it run the games with good fps, or is it better to save for a 1060 6GB? thanks for the help!!

Easily. You don't need to go cranking everything up to the max in all games.

When I switched from a 16:9 to an ultrawide there was a slight performance decrease in most games. Most of the time it was not enough to warrant a settings change but in some more intense titles like Unturned I needed to make small adjustments, But it was mainly to hit the 75 fps because my new ultra wide runs at 75hz and I wanted all those frames. If the monitor you are speaking of is just the larger version of mine with no changes to the refresh rate then you will be fine. The only limit being the 3gb of vram that may limit you in some more demanding titles since ultra wide has a larger effect on vram from my personal tests. But in every game I have played the difference was 10% or less.
