Heres my list. I caught a bunch of black Friday and cyber monday deals and bought a bunch of stuff already. But I was wondering, should I have a separate ssd as a boot drive or should I be fine with using my 1tb ssd and to store games and such. I dont want a hard drive and was just planning on when the time comes I need more storage to buy another ssd.

I wouldn't make life more complicated than necessary -- go ahead and use your 1 TB SSD for boot.

Try Optane, it works wonders on boot up times in my PC.
