Averaging above 110 fps on 1080p. I can't test any higher res because of my old monitors.

This is exactly what I did. The CPU just cruises along with no issues while the GTX 570 is the obvious bottleneck. I am only playing Overwatch at the moment and the 570 still kicks butt.

Thanks! The choice between the RX 480 and the GTX 1060 will just come down to price for me really. I am not too fussed about a graphics card lasting years because I can always offload it second hand to upgrade later on. I would definitely wait for an 8pin 480 though.
